Recipe for Chicken Diablo
  • 2 Boneless skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 eggs
  • 2 ounces milk
  • 2 tbsps grated Parmesan cheese
  • 2 cups bread crumbs
  • A tsp of each: white pepper, cayenne pepper, onion powder, garlic powder, seasoning salt
Mix flour, seasoning salt, white pepper and cayenne pepper on a plate set aside. Combine eggs and milk in a shallow bowl and set aside;
Bath chicken breasts in flour mixture followed by an egg wash and then give them a good bath in bread crumbs; lightly shake off any excess and pan fry.
Place on sprayed cookie sheet.
350 degrees for 20 minutes

Sauce
  • 250 ml 35 per cent cream
  • One-half cup of sun-dried tomatoes (not packed in oil)
  • 1 clove minced garlic
  • 1 tsp of butter
Melt butter in sauce pan, add garlic and saute for two minutes; add cream and remaining ingredients cook until reduced
Remove Chicken from oven pour sauce over top.
